I found this recipe in a magazine while sitting at the doctor's office today.I can't wait to make it!
(I will probably leave out the crushed red pepper flakes though.)
1 pound bacon, cut crosswise into 1/2 inch pieces
1 large yellow onion, finely chopped
3 cloves garlic, finely chopped
2 tsp mustard powder
1/2 cup bourbon
1/3 cup cider vinegar
1/4 cup maple syrup
1/3 cup packed light brown sugar
1/8 tsp crushed red pepper flakes
Directions:
In 2 batches, cook the bacon in a large skillet over medium heat, stirring frequently until crisp. 6 minutes per batch. Transfer to a paper towel lined plate.
Discard all but 1 tablespoon fat and return the skillet to medium heat. Add the onion and garlic and cook, stirring occasionally until beginning to soften, 6 minutes; stir in the mustard powder.
Add the bourbon, vinegar and maple syrup and simmer, scraping up any brown bits, until the minute is reduced by about half, 3 to 4 minutes. Stir in the sugar and red pepper.
Return the bacon to the skillet and cook, stirring occasionally until the liquid reduces to a fairly thick glaze. 4 to 5 minutes.
